Celebrate the Harvest

As the Fall Equinox marks the official end of summer, so Nature gives us an opportunity to celebrate the year’s harvest…not only what the Earth has bountifully provided to us, but also the ways in which we have grown in ourselves, our relationships, and our spirituality.

During this mini-retreat, you’ll be guided through a meditation to help you identify and reflect upon the fruits of your personal labor.

You’ll savor the flavors of the Fall with a mouth-watering four-course, local, seasonal and organic vegetarian meal. (Menu and details about the chef below).

And as Nature is preparing for the hibernation of Winter, you’ll end the evening with a fire ceremony, to burn away anything you don’t want to germinate through the Winter.

Vegan Niçoise Napoléon

Roasted red bell peppers, mango, asparagus, green beans, avocado, boiled potato and red onions soaked in soy sauce drizzled with extra virgin olive oil.

Eggplant-Stuffed Tomato Provençale

Baked Heirloom Tomato stuffed with sautéed eggplant and topped with homemade marinara sauce.

Cauliflower & Brussel Sprouts Gratin

Cauliflower & Brussel sprouts in a bechamel sauce with nutmeg and parmesan baked to a crispy, golden brown.

Bananas Foster

Sliced bananas sautéed with brown sugar and butter, flambéed with rum and créme de banane. Topped with vanilla bean ice cream.

Recently profiled in Inc. Magazine as a leader in the health/wellness industry in Boulder, CO, Jessica has been studying and working with the human mind, body, and spirit for almost twenty years. Her studies of both Western and Eastern philosophies, religious traditions, and Chinese medical theory give her many lenses through which to help others bring into focus the big picture of their lives. The practical studies of massage, shiatsu, yoga, and qigong were the natural branches of her intellectual pursuits and she has been sharing all of this knowledge through teaching for almost ten years. Integral Travel gives her the opportunity to bring it all together in the context of travel. She believes that removing yourself from your day-to-day environment opens the mind and heart to new things and combining inner exploration with outer exploration anywhere in the world will actually bring you home…to yourself, to heal your heart, and to cultivate optimal health and happiness to create positive changes in the world around you.

Philippe developed a deep respect for food during his childhood. Raised in the south of France in his family’s hotel kitchen, he watched with awe and respect as local artisans brought their cheese, breads, vegetables, and animals to the restaurant for use in his family’s dishes. He still carries with him the same respect for everything he creates. He feels the food. Watching him cook is like watching an orchestra at work together. It is an evening’s entertainment in and of itself. And then you get to eat it! The love and passion he puts into the food can be tasted in every bite.
